OpenAPI Metadata for API Endpoints (#1941)
- Updates the `/docs` and `/redoc` API endpoints to have better metadata,
including using Browsertrix favicon and our logo for the `/redoc` endpoint.
- add new logo file 'docs-logo.svg' to root
